How to Use 

Best For red fermented pork, chicken, ribs, fish, and Chinese-style braised dishes.

 

Ingredients (Guide)

  • Pork / chicken / ribs / fish   About 500–800 g

  • JHJ Red Yeast Sauce   2–4 tablespoons (adjust to taste)

  • Soy sauce (optional)   1–2 tablespoons

  • Sugar (optional)  a small amount to balance the savoury flavour

  • Rice wine or water as needed

  • Garlic, ginger (optional)  for extra aroma

 

Basic Method (Red Fermented Pork Example)

1. Marinate (recommended)
    Mix the meat with JHJ Red Yeast Sauce, a little soy sauce, and garlic or ginger if using.
    Marinate for 20–30 minutes or longer for deeper flavour.

2. Pan-fry or sear
    Heat a little oil in a pan. Cook the meat until lightly browned and fragrant.

3. Simmer or braise
    Add a splash of rice wine or water. Simmer gently until the meat is cooked through and the sauce thickens.

 

Handy Tips 

  • Red fermented rice paste has a naturally savoury, slightly sweet, fermented aroma — start with a small amount and adjust to taste.

  • Can also be used as a marinade, stir-in sauce, or braising base.

  • Refrigerate after opening and use promptly.
