Stir-Fry Method (Glass Noodles)
- Soak the Noodles:
Soak the vermicelli in water for 5–10 minutes until soft. Drain and set aside. - Cook the Meat & Veg: Heat a bit of oil in a pan or wok. Add shredded meat (like beef, chicken, or lamb), some dried shrimp if you like, cabbage, carrots, soy sauce, vinegar, and a pinch of salt.
Stir it all together. Add a splash of water and bring to the boil. - Add the Noodles: Add the soaked vermicelli and stir-fry until the noodles turn clear and soak up the flavour.
Soup Method (Glass Noodles)
- Same Start: Soak the noodles and stir-fry your meat and veg like above.
- Add Water: Pour in more water to turn it into a soup — add as much as you like.
- Cook the Noodles: Once boiling, add the vermicelli and cook for 3–7 minutes.
- All Ready: Turn off the heat and serve. You’ve got a warm, tasty noodle soup.
