Recipe: Braised Pork Belly with Shaoxing Preserved Mustard Greens

Ingredients

  • 300g pork belly, sliced or diced
  • 50–80g Shaoxing Preserved Mustard Greens (rinsed and chopped)
  • 2 slices ginger
  • 1 tsp minced garlic
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp cooking wine (optional)
  • ½ cup water or stock
  • Cooking oil 

 

Method

  1. Prep the greens. Rinse the preserved mustard greens to reduce the saltiness, then chop.
  2. Cook the pork. Heat a little oil in a pan. Add the pork belly and fry until lightly browned and fragrant.
  3. Add aromatics. Stir in the ginger and garlic and cook briefly until fragrant.
  4. Add the greens. Add the chopped preserved mustard greens and stir-fry for 1–2 minutes.
  5. Season and braise. Add soy sauce, sugar and cooking wine. Pour in the water or stock, cover and simmer for 15–20 minutes until tender and full of flavour.
  6. Serve and enjoy with steamed rice. Rich, savoury and comforting.

 

Tip

Short on time? Just stir-fry the pork and preserved greens together, season and serve. No braising needed.
