Recipe: Braised Pork Belly with Shaoxing Preserved Mustard Greens
Ingredients
- 300g pork belly, sliced or diced
- 50–80g Shaoxing Preserved Mustard Greens (rinsed and chopped)
- 2 slices ginger
- 1 tsp minced garlic
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp cooking wine (optional)
- ½ cup water or stock
- Cooking oil
Method
- Prep the greens. Rinse the preserved mustard greens to reduce the saltiness, then chop.
- Cook the pork. Heat a little oil in a pan. Add the pork belly and fry until lightly browned and fragrant.
- Add aromatics. Stir in the ginger and garlic and cook briefly until fragrant.
- Add the greens. Add the chopped preserved mustard greens and stir-fry for 1–2 minutes.
- Season and braise. Add soy sauce, sugar and cooking wine. Pour in the water or stock, cover and simmer for 15–20 minutes until tender and full of flavour.
- Serve and enjoy with steamed rice. Rich, savoury and comforting.

Short on time? Just stir-fry the pork and preserved greens together, season and serve. No braising needed.
