Braised Pork with Chopped Bamboo Shoots
Ingredients:
300g pork belly (cut into bite-size cubes)
1 LH Dried Shredded Bamboo Shoots (170g, chopped bamboo shoots)
2 cloves garlic (chopped)
1 Tbsp soy sauce
1 Tbsp dark soy sauce (for colour, optional)
1 tsp sugar
1 cup water or stock
1 Tbsp cooking oil
Method:
Prepare bamboo shoots: Rinse the chopped bamboo shoots lightly under running water to reduce saltiness. Drain well.
Fry pork: Heat oil in a pot, add pork belly pieces and fry until lightly browned.
Add flavour: Stir in garlic, soy sauce, dark soy sauce, and sugar. Mix well.
Add bamboo shoots: Put in the rinsed bamboo shoots and stir together.
Simmer: Add water or stock until it just covers the pork and bamboo shoots. Bring to a boil, then lower to a simmer.
Cook: Cover and cook for 30–40 minutes until the pork is tender and flavours have combined.
Serve: Best enjoyed hot with steamed rice.
