Taiwanese-Style Laver Egg Soup
Ingredients
• 1 handful Wild Dried Laver
• 1 egg
• 600ml water or stock
• ½ tsp sesame oil
• Pinch of white pepper
• Salt or soy sauce, to taste
• Optional: spring onion, tofu cubes, goji berries
Instructions
1. Rinse laver briefly and soak for 1–2 minutes.
2. Bring water or stock to a boil.
3. Add laver and simmer 2 minutes.
4. Beat the egg and pour in slowly, stirring gently.
5. Season with salt/soy and white pepper.
6. Finish with a drizzle of sesame oil and spring onions.
