Taiwan-Style Radish Omelette
Ingredients
- 2–3 tbsp dried preserved radish (rinse, soak 30 minutes, squeeze dry & finely chop)
- 3 eggs
- 1 tbsp sliced spring onion
- Pinch of white pepper
- Tiny pinch of sugar
- Oil for cooking
Instructions
- Rinse the radish, soak for 30 minutes, then squeeze dry and chop finely.
- Beat eggs and mix with radish, spring onion, pepper and a touch of sugar.
- Heat a little oil in a pan and pour in the egg mixture.
- Cook on medium-low heat until set and golden on both sides.
- Slice and serve warm.
