Dessert: Lotus Seed & Snow Fungus Sweet Soup

Ingredients

  • Dried lotus seeds 80g
  • Dried snow fungus (white fungus) 1 piece
  • Rock sugar (or sugar) to taste
  • Water 1.5–2L
  • Optional: goji berries, red dates

Instructions

  1. Rinse lotus seeds and soak 2–4 hrs (or overnight).
  2. Soak snow fungus 20–30 mins; trim base, tear into pieces.
  3. Bring water to boil, add lotus seeds, simmer 30 mins.
  4. Add snow fungus, cook 20–30 mins until soft and jelly-like.
  5. Add rock sugar and optional goji/red dates.
  6. Serve warm or chilled.

Notes

  • Soaking makes lotus seeds soft & creamy.
  • Chilling thickens the soup and makes it refreshing.

 

 

Savoury Option: Lotus Seed Chicken Soup

Ingredients

  • Dried lotus seeds 80g (soaked)
  • Chicken pieces or thigh fillet
  • Ginger slices
  • Salt & white pepper
  • Optional: goji berries, spring onion

 

Instructions

1. Soak lotus seeds 2–4 hrs; rinse.

2. Boil chicken with ginger.

3. Add lotus seeds, simmer 40 mins.

4. Season with salt & white pepper.

5. Garnish with spring onion.
